Three tablespoons of lemon juice
1/2 cup water
Two teaspoons cinnamon
Two teaspoons ginger
One teaspoon nutmeg
1/4 teaspoon ground cloves
one pouch of liquid Certo or another pectin
6 1/2 cups sugar
Prepare to preserve jars by sanitizing them in a dishwasher or immersing them in a pot of boiling water.

Add more water as necessary. Mix in Certo and sugar and bring to a full rolling boil. Boil for 3 minutes, stirring constantly. Remove from heat and pour into prepared jars. Screw on lids with bands. Cool and refrigerate for up to a month OR process in a hot water bath for more extended storage.
1 – 14 oz. package of sweetened shredded coconut
1 cup sliced almonds
3/4 cup white sugar
Two teaspoons of grated lemon rind
1/4 teaspoon of salt
Four egg whites
Preheat oven to 325 degrees. Mix all the ingredients in a medium size bowl. Drop mounds (1 or 2 tablespoons, depending on how large you want your macaroons to be) onto parchment-lined baking sheets, spacing an inch apart—Bake for about 20 minutes or until edges are lightly browned. Let cool slightly, remove from parchment and finish cooling on wire racks. (Do not allow to cool on parchment, as they will stick completely).
